Potato Soup with Vegetables and Pasta

Ingredients

  • 1/4 cup 
    Olive Oil
  • 2 med 
    Potato
  • 1 cup 
    Carrots
  • 3/4 cup 
    Onions
  • 5 1/2 quart 
    Canned Chicken Broth
  • 2 tbls 
    Basil
  • 1 tsp 
    Ground Oregano
  • 3 cup 
    Summer Squash
  • 3 cup 
    Red Tomatoes
  • 5 1/2 cup 
    Macaroni
  • 1/2 cup 
    Green Peas, frozen
  • 1 pinch 
    Table Salt
  • 1 pinch 
    Black Pepper
  • 1/3 cup 
    Parmesan Cheese

Directions

1. In a large pot over moderate heat, warm olive oil. add potatoes, carrot, and onion; saute for 5 minutes.

2. Add chicken broth, basil, and oregano.

3. Bring to a boil, reduce heat and simmer for 15 minutes.

4. Add zucchini and 1 cup of the tomatoes. Simmer 10 minutes.

5. Add pasta, peas, and remaining 2 cups tomatoes; simmer until pasta is cooked through.

6. Season with salt and pepper. Serve immediately and garnish with parmesan cheese.
